    Winner, Winner Chicken Dinner

Who doesn’t love a $5 rotisserie chicken? They’re a convenient timesaving shortcut, delicious, and one of the cheapest meats you can buy. You can make practically anything with them, from soup to tacos, but we love making chicken casseroles the most. Next time you’re meal planning for your Costco or Sam’s Club rotisserie chicken, considering one of these comforting casseroles.

    King Ranch Chicken Casserole

Anyone from Texas will be familiar with this hearty casserole named after the largest ranch in the state. It’s a creamy, rich dish with peppers, onions, tomatoes, and cheese layered with chicken and corn tortillas. Think of it like a Tex-Mex lasagna.

    Chicken and Stuffing Casserole

You can get that Thanksgiving feel (and smell) in the air anytime of year with this casserole. Chicken and frozen mixed vegetables are mixed with canned cream soup, then topped with good old Stove-Top stuffing. Serve it with cranberry sauce or gravy to make it really taste like a holiday.

    Rotisserie Chicken and Rice Casserole

Rice is one of the cheapest ways to stretch anything, including a rotisserie chicken. Here, it’s mixed with chicken, almonds, and celery right in the casserole dish so there’s hardly any dishes to do. A buttery cornflake topping gives it extra crunch.

    Hot Chicken Salad

Hot chicken salad might sound a little strange, but it’s a classic Southern casserole. Cooked chicken is mixed with mayonnaise, water chestnuts, celery, and seasonings. Plenty of cheddar cheese and almonds are sprinkled on top before baking.

    Chicken Parmesan Casserole

Chicken parmesan is fantastic, but who’s got time to make it? Try this shortcut casserole version instead that uses rotisserie chicken. Mix it with pasta and marinara sauce, then top it with cheese, parsley, and buttery garlic breadcrumbs that mimics the typical fried chicken breading.

    Chicken Tetrazzini with Peas

The secret to the best tetrazzini is sherry in the cream sauce, so don’t skip it here. Coat cooked spaghetti, chicken, mushrooms, and peas with the sauce, then pour into a casserole. Parmesan makes a great topping, but it’s also good with seasoned breadcrumbs on top.

    Broccoli Chicken Divan

Chicken and broccoli are a great combination. Instead of using canned cream of chicken soup, this recipe uses cream of broccoli so there’s plenty of broccoli flavor. Though this is best with fresh broccoli, you can use frozen as a shortcut.

    Chicken Enchilada Casserole

Inexpensive canned pinto beans and corn tortillas help stretch the chicken in this Tex-Mex casserole. They’re layered with canned enchilada sauce and plenty of cheese for a gooey dish. Though it’s a simple recipe, the toppings, like crushed tortilla chips, cilantro, and avocado, are where everyone in your family can customize it.

    Chicken and Biscuits Casserole

Unlike many casseroles that include canned biscuits, you mix the dough into the dish instead of laying them on top. That results in little pockets of biscuits in a creamy, chicken- and veggie-studded sauce, almost like chicken and dumplings.

    Recipe: 12 Tomatoes

    Chicken Cordon Bleu Casserole

You make a quick cream sauce from scratch flavored with mustard, onions, and garlic for this recipe. Then it gets poured over cubed chicken and ham. Swiss and parmesan cheese give it a nice sharp kick, and toasted breadcrumbs make the top nice and crunchy.

    Chicken Noodle Casserole

This dish tastes like chicken noodle soup in casserole form, so it’s got to be one of the most comforting things you can cook. Though this recipe only calls for frozen peas, celery and carrots are also great additions. If you want more flavor, try adding some poultry seasoning or thyme.

    Chicken Cobbler

Chicken cobbler is a recipe that went viral on social media, and it’s easy to see why. You layer the ingredients in a casserole dish without stirring, and it magically creates a kind of chicken pot pie. Plus, the biscuit topping is made with Reb Lobster Cheddar Bay biscuit mix, so how could that be bad?!

French Onion Dip Chicken and Rice Casserole

This chicken and rice casserole gets a big flavor boost from caramelized onions. The creamy base is made with cream cheese and Greek yogurt, but you could use some french onion dip if you’re feeling sassy. The best part? The crinkle cut potato chips baked on top.

    Buffalo Chicken Casserole

If your family is full of people who will eat anything with buffalo sauce on it, then this casserole is for you. It’s got rotini pasta, ranch dressing mix, and of course plenty of hot buffalo sauce under a layer of cheddar cheese. Top it with ranch dressing or crumbled blue cheese.

    Cheesy Chicken Potato Casserole

Classic cheesy potato casserole gets a main course upgrade with a $5 rotisserie chicken in this dish. Using the frozen cubed hash browns with peppers and onion (sometimes called potatoes o’brien) adds a little extra something too. And crushed croutons on top? Genius.
